Cake in a Mug- Recipes for Chocolate and Vanilla

This recipe has been an old friend for a while now.  I love food, espeically sweets, so having them in the house is dangerous.  The recipe’s basic ingredients are things I always have on hand, and it’s nice to treat myself every once in a while with an awesome dessert like this.  It makes two servings, and is fun for my three-year old and I to make together and split.


Chocolate Cake in a Mug

1/4 cup all-purpose flour
1/4 cup packed brown sugar
2 Tbsp unsweetened cocoa powder
Pinch salt
2 Tbsp canola or other mild vegetable oil
2 Tbsp milk, coffee or water
2 Tbsp chopped dark chocolate or chopped pecans (optional)

In a heatproof mug, stir together the dry ingredients until no lumps remain. Stir in the oil and milk until you have a thick paste. Stir in the chopped chocolate or nuts, if you’re using them.

Microwave on high for a minute, checking it after 30 seconds– it will be done when it’s springy on top but still a bit gooey.

vanillaThis vanilla cake in a mug recipe is new to me.  I was browsing online for a mostly-healthy vanilla recipe and decided to try this one out.  I was a little disappointed with the lack of vanilla flavor, and it wasn’t super sweet, BUT if you’re looking for something on the healthy side it’s not too bad.  The recipe makes two servings, although I could have eaten the whole thing easily.  My three-year old put chocolate chips on his, and I put cinnamon and sugar on mine.

One serving (half of the recipe) has 123 calories, 5.6 grams of fat, and 16 grams of carbohydrates (10 grams of sugars).


Vanilla Cake in a Mug

2 tbsp flour
1-1/2 tbsp sugar
1/4 tsp baking powder
1/8 tsp salt
2 tbsp milk
3/4 tbsp oil
1/4 tsp vanilla extract

Mix the dry ingredients together, then add the liquids.  Spray non-stick spray into a mug and add your cake recipe.  Cook in the microwave for about a minute.

To add variety: Sprinkle with Chocolate Chips, Add 1/2 tsp Coffee and 1/2 tsp Cocoa to the batter, Add 1 tsp Cocoa to the batter, Sprinkle with Cinnamon and Sugar
