On a recent road trip, I was introduced to baked oatmeal. The little coffee shop where we stopped featured homemade baked goods. Their baked oatmeal was so good I wanted to find a recipe to make it at home.
This version of baked oatmeal is nice because it is a healthier version, leaving out sugar and oils. It baked nicely and best of all, my preschool son loves it! I chose to add raisins to my recipe- yummy!
It is a quick and easy breakfast when you don’t have time to sit down. Just pop a square into the microwave for about 10 seconds and you’re good to go!
A couple of notes that I didn’t see on the original recipe post: this recipe uses unsweetened applesauce so you will want to refrigerate it unless you will eat it within a day; I found the sweetness to be just right for mornings, but if this recipe isn’t sweet enough for you try sprinkling it with brown sugar just before baking or add some to the recipe.
